Vegetable pancake Korean or Yachaejeon: 야채전 is the typical Korean pancake, and it is somewhat different form other pancake and unique also. That Korean pancake is made in Korea to celebrate spring coming, as it has many delicious vegetables.

Ingredients

Most of the ingredients are vegetables and you can make a nice delicious vegetable pancake with any vegetables, or you can use these vegetables:

A leek

Green onions

A Sweet potato

A Carrot

An onion

Zucchini

Green chili pepper or jalapeno

Mushroom (you can use shiitake mushroom, Portobello mushroom or any white mushroom)

3/4 all purpose-flour

1/2 teaspoon of salt

3/4 cup of water

12 inch non-stick skillet

Method




.Chop just four green onions; cut them around one inch size

Use only a slice of a leek, chop it in tall thin slices.

Cut zucchini in slices, you need about 1/2 cup, cut them into matchsticks.

Cut jalapeno in thin slices, but if you can't eat spicy food, just skip it.

Measure what you need of vegetables, you need just 2 and half cups of your cut vegetables.

Put the cut vegetables in a large bowl and cut the inion and add to them. Use only a quarter of a large onion.

Chop a quarter of a sweet potato and add it to your ingredients.

Add 3/4 of all purpose-flour.

Add 1/2 teaspoon of salt.

Add the water and mix well. You'll see after mixing a little flour and lots of vegetables and that is the naturally typical shape of the vegetable pancake Korean.

Heat the skillet over medium high heat.

Add about 2 tablespoons of vegetable oil. Use generous amount of vegetable oil so as your pancake is going to be crunchy.

Put mixing ingredients on the skillet and spread them evenly thin; thin pancake.

Turn down the heat to medium and add the mushroom after cutting and over all the pancake parts.

After about one minute, you can move it on the skillet, and prepare your favorite sauce.

You can prepare a wonderful sauce by about one tablespoon of soy sauce, 2 teaspoons of vinegar, and a hot pepper flakes, which is optional, you don't have to use it if you don't have. Add one tablespoon of sesame seeds and mix all.

After it cook, you can use your spatula to turn over to cook the other side.

Add one more vegetables oil to it

After the two sides are cooking, your vegetable pancake is ready to celebrate the spring with you.

Serve it in a plate with some soda, cut it in pieces, put in sauce, eat and celebrate the spring.
